Snap Pea

This delicious type of pea is a favorite among home gardeners and customers at roadside and farmers’ markets. Snap peas can be harvested when young, but are normally grown to full size, when peas are mature. Pod and peas stay tender and sweet when fully developed. Snap peas can be eaten pod and all and make a delicious addition to spring roadside market or farmers’ market displays. Eat fresh and raw, right off the vine, or “snapped” and cooked briefly (about 3 minutes).
