Snap Pea
Snap peas make a delicious addition to spring roadside markets or farmers’ market displays. This type of pea is a favorite among home gardeners and customers at both roadside and farmers’ markets. Snap peas can be harvested when young, but are normally grown to full size, when peas are mature. Snap peas and pod stay tender and sweet when fully developed; eat fresh and raw, right off the vine, or “snapped” and cooked briefly (about 3 minutes).
