Asparagus Purple Passion






Purple Passion asparagus has many similar characteristics to green asparagus but offers something new to home gardeners or commercial growers. The spears are generally larger and more tender, and have a 20% higher sugar content. The deep-burgundy color of the spears is striking, and it provides excellent purple color when added raw to salads. Some upscale restaurants use Purple Passion asparagus to garnish salads. It turns green when cooked, and the sweetness gives it a mild, nutty flavor. The vascular bundles have less lignin which makes the spears less stringy, allowing the cook to use the whole spear and not waste the bottom. Purple Passion asparagus is productive, and offers some resistance to rust, root/crown rot, and fusarium. Hardiness zones 2-9.
