Amethyst is a purple podded specialty bean that is produced on vigorous bush plants. The attractive round pods are straight, 5 - 5 1/2" long, and completely stringless. If plants are kept picked, Amethyst produces continuously over a long harvest period. Pods lose their purple color when cooked in hot water.
