With mild to medium heat, Ancho (or Poblano) peppers are a wonderful base for mole sauce and soups, offering an earthy sweet flavor. Called Poblano peppers when fresh and Ancho peppers when dried, the fruit ripen from dark green to deep red and are tapered to a point.
