Padron is a famous Spanish heirloom pepper named after the town that they originated from. Harvest the fruit green when they are about 1-1.5" long. At this size about 1 in 20 of the fruit will be hot, and the rest mild. All the fruit will become hot when they reach 2-3", and even hotter as they ripen to red. Padrons are served sautéed in olive oil with coarse-ground sea salt at tapas (appetizer) bars across the country.
