Watermelon radish is a Chinese ball-shaped radish that has a pinkish-red interior color surrounded by a whitish flesh that turns green at the shoulders. When cut in half, it resembles a watermelon. Depending on when they are harvested, the roots can measure from 2 to 4" in diameter and have tall tops. The flesh is crisp and mildly sweet, and is great in salads.
