Kale’s true flavor is sweet and pungent, but it is often harvested at the wrong time, when its eating quality is poor and its leaves are tough. Harvest the young leaves when they are at their most tender stage, and mix them in with other greens for an outstanding salad mix. Tear up small pieces and offer a taste test to customers.
