Snow peas, also known as sugar peas, are eaten pod and all but are harvested before the seed fully matures. Snow peas are a very popular item for stir fries and other Asian type dishes. They make a delicious addition to spring roadside market or farmers’ market displays. Eat fresh and raw, right off the vine, or “snapped” and cooked briefly (about 3 minutes).
