Endive is a curly-leaf green used as a substitute for, or in combination with, lettuces and spinach. The broad-leaf variety is known as Escarole. To keep from becoming bitter, leaves can be blanched 2-3 weeks before harvesting by gathering and tying outer leaves. (Note: make sure leaves are dry when tying to prevent rotting.)
